Banana & Walnut cake

Serves: 8 Prep: 30mins Cook: 45mins 

Ingredients

  • 8 oz Margarine 
  • 12 oz Light brown sugar
  • 4 Ripe & mashed bananas
  • 4 Eggs beaten
  • 1 lb Self-rising flour
  • 2 tsp Baking powder
  • 6 oz Chopped walnuts
  • 4 tbsp Milk

Method

  1. Preheat the oven to 160°C and line two 2 x 2lb loaf tins with baking paper.
  2. Cream together the butter and the sugar.
  3. Add in the eggs and mix well.
  4. Again, add the banana and mix well.
  5. Lastly, add all the other ingredients into the bowl and mix well.
  6. Place the mixture in the loaf tins and cook in the oven for 45 minutes.
  7. Ensure the cake is cooked until it is golden brown and firm to the touch.

Tip – this can be frozen
