Ingredients

5 eggs

Salt & pepper to taste

Cooking spray

 

Fillings;

 

Bacon pieces,

Tomatoes, chopped

Chopped spinach,

Parmesan cheese, grated

 

Method

1.     Preheat the oven to 180°C

2.     Grease a muffin tin with plenty cooking spray

3.     In a jug, beat together the eggs until well combined.

4.     Pour the egg mix into the muffin tins and top with any choice of fillings to your taste.

5.     Add desired amount of salt and pepper

6.     Bake for 20 minutes in the oven until the egg is set.

7.     Enjoy as a healthy and easy breakfast!
