The best chocolate brownies
Credit to Ellis Eggs
Ingredients
720g caster sugar
500g unsalted butter
400g dark chocolate (or milk if you prefer)
160g cocoa powder
150g dried cherries
130g plain flour
2 tsp baking powder
8 eggs
2 orange zests
100g icing sugar (for decoration)
Methods
1. Preheat the oven to 180 degrees Celsius/ 350 Fahrenheit/gas mark 4
2. Line a 25cm squared baking tin with parchment paper
3. In a large bowl over some simmering water, melt the butter and chocolate and mix until smooth
4. Add in the cherries and stir together
5. In another bowl, mix the cocoa powder, flour, baking powder and sugar
6. Add this to the chocolate and cherries and stir until combined
7. Beat the eggs and mix in until you have a silky consistency
8. Pour the mix into the tray and bake in the oven for 25 minutes
(a skewer will not come out clean for these so you should check that the brownies are slightly springy on top but will still be gooey in the middle)
9. Allow to cool in the tray after cooking, and transfer to a chopping board to cut into squares.
10. Sprinkle over the icing sugar and enjoy
