The Greatest Mince Pies Ever

Ingredients

·      225g butter, diced

·      350g plain flour

·      100g golden caster sugar

·      Pinch of salt

·      280g mincemeat (fruit or meat to preference)

·      1 egg (Ellis Eggs of course)

·      Icing sugar to dust

 

Method

1.     Rub together the butter and the flour with your fingertips.

2.     Once a crumb has formed, mix in the sugar and a pinch of salt.

3.     Create a ball of your pastry and knead briefly (you can use this immediately or chill for use later on)

4.     Heat the oven to 200C/180C fan and line 18 holes of two 12-hole muffin tins with the small amounts of pastry.

5.     Place a heaped teaspoon of mincemeat into each pie.

6.     Take a small ball of pastry and flatten it out to put on top of the pie

7.     Press the edges of the pastry together and brush the top of the pies with the egg

8.     Bake in the oven for 20 minutes or until golden and leave to cool on a wire rack.

9.     Dust with icing sugar and serve.

 

*These will keep for 3-4 days

*Before baking, these will keep in the freezer for up to a month
